RED FRUIT TRIFLE

INGREDIENTS


  • 500g mixed frozen summer fruits
  • 4 tbsp caster sugar
  • 3-4 tbsp sherry or sweet wine (optional) replace with fruit juice if not using
  • 1 packet Arden & Amici Savoiardi
  • 600ml good quality ready-made custard
  • 600ml double cream

 

METHOD

 

Place the summer fruits in a bowl and sprinkle with the sugar and sherry or sweet wine (if using) or fruit juice. Mix gently and leave to thaw for approx 1.5 hours.

 

Using an electric whisk, whisk the cream until it makes very soft peaks when the whisk is lifted from the mixture.

 

Place half of the Arden & Amici Savoiardi in the base of a trifle bowl.

 

Spoon over half of the fruits and their juices and then top with the custard.

 

Add another layer of the savoiardi and a little more of the remaining fruit.

 

Place spoonfuls of cream over the top of the trifle and spoon the remaining fruit in the centre.

 

Serve straight away.
