Gooey Chocolate Cantuccini Pots« Back

Create an Easter treat with this simple gooey chocolatey & crunchy dessert… what more could you want at Easter!

Makes: Approx 8 pots

Preparation time: 20 minutes


For the base:
100g Arden & Amici Chocolate Chunk Cantuccini (crushed)
100g Digestives crushed
100g Butter

For the Chocolate Mousse:
½ Pint of single cream
200g 70% cocoa solids chocolate
2 large egg yolks
20g Butter

• Crush the Arden & Amici Chocolate Chunk Cantuccini and digestives
• Melt the butter in a pan and then mix in the crushed biscuits until combined
• Press the biscuit mixture into the base of 8 individual serving dishes and refrigerate
• In a thick bottomed saucepan , heat the cream until nearly boiling
• Remove and leave to cool for 1 minute
• Break your chocolate into the cream and stir until melted and smooth
• Beat in the egg yolks until smooth
• Allow to cool slightly before stirring in the 20g butter and then stir again until smooth & glossy.
• Pour the chocolatey mixture over the biscuit base and refrigerate until ready to serve
• To serve decorate with sugared chocolate mini Easter eggs, then dive in!!
